yummy cupcakes

yay! it is friday!! i have some school work to finish up and lots of knitting to do this weekend! i am almost done with 1/2 of the super super secret 🙂 today was full of errands and getting up way toooo early because sleep was just not in the cards. 1/2 way through the day though my eyes closed as i tried to read a book. when i woke up i decided to make these! 🙂

Coconut Cupcakes with Lime Buttercream Frosting

i’ve been wanting to make them for a while now. i feel kind of spoiled because i am used to being able to get the ingredients/tools i need if i want to cook something. but here, sometimes the ingredients called for just aren’t available. or if they are, i’m not sure exactly where to find them. i actually own the May 2009 issue of Cooking Light Magazine (yeah, i’ve been wanting to make these for a while!). the recipe is also available here! 🙂 They turned out pretty good. They are a good mix of sweet and tart, which is kind of a refreshing tasting cupcake! 🙂 the ingredient that i couldn’t seem to find anywhere…potato starch, which is not the same as potato flour. what i ended up doing was taking 100% real dried instant potato flakes and using my cheap cheap cheap food processor (like $10 cheap) and grinding the flakes down as much as possible. i have only eaten one cupcake and i didn’t taste any potato:) also, these cupcakes go very well with a cold corona. 🙂

along with business statistics and principles of accounting II, i finished the back of the CPH, so that is a good feeling:) i haven’t blocked it yet, so the edges are rolling in, but to have this one piece done feels pretty darn good:) i’ve also stumbled upon two video casts that i thought i’d mention and link, theknitgirllls (available on itunes), and round the twist. having no knitting group to meet up with, it is kind of neat to watch a podcast while knitting. i can pretend i have other knitter friends close by. laura is my only knitting friend who lives nearby, and we have been getting together, but when that isn’t possible, watching these video podcasts is kind of cool. if you are a dork like me 🙂 i’ve also joined both of these groups on ravelry as well. i should get up at 4am more often!! happy labor day everyone!
